The Caciotta by Castellan Urbano is a soft texture table cheese, smooth and compact with small eyes, light yellow color rind, with short affinage. The taste is pleasantly fresh and typical, a delicate flavor of lightly salty milk.
The Caciotta the mother of all the cheeses: humble custodian of history and the charm, keeping the memories to the rural, peasant traditions.
We have been producing it for the last 50 years, with 100% Veneto pasteurized cow’s milk, arriving only from local certified farm houses (zero kilometers).
We suggest, try it fresh, to appreciate the pleasant lightly savory taste typical of the cheeses just pulled out from the brine. Great even when cut to cubes to enrich salads, it can substitute the Mozzarella on the pizza avoiding the pizza dough getting moist during cooking, obtaining a more digestible pizza.

Ingredients: milk, rennet, selected probiotics, salt. Edible rind only for the small ‘Caciottine’ in the ‘Flow-pack’. All the other forms are treated with E200, E202, E235 preservatives on the rind surface.
Affinage 15 to 17 days.

Available in packs of 400 g, variable.
Visual: round forming, dotted rind, straw yellow color, the structure with small eyes. Olfactive: fresh and characteristic scents. Taste: enjoyable on the palate, lightly briny. At the touch: smooth, lightly elastic.
