The Biancone is a delicate flowery rind Cheese with a pleasant and at the same time, strong taste. The affinage allows to the always white structure, homogeneity and creaminess.
The rind is flowery white and velvety because of the adding of white molds during the elaboration process.
It can be considered as the gentle variation of the ‘Morlacco’ because it is elaborated with milk strictly pasteurized, it has a definite short maturation period of approximately 30 days.
It’s great as a main course cheese base platter, it does not reject, though, the pairing with Jams (peculiar with all berries) becoming a great appetizer. It can be suggested also paired with a spicy fig sauce and paired together with a structured red wine like a Cabernet.
